ABSTRACT

The importance of  vegetables in human nutrition cannot be overemphasized, as they are important sources of nutrients, dietary fibre, and phytochemicals. However, the bioavailability of these nutritive values and palatability among other reasons has set certain barriers in their consumption. This work investigated utilized 60 wistar rats fed with different diet composition such as high sucrose, juice and pulp extracts of Venonia amygdalina and Telfairia occidentalis for three weeks. This study revealed the both T. occidentalis and V. amygdalina significant (p<0.05) reduced cardiovascular risk induced by the consumption of high sucrose diet. However, V. amygdalina was more effective than T. occidentalis. This study revealed the efficacy of pulp extracts of T. occidentalis over pulp extract of V. amygdalina as well as the juice extracts of both leafy vegetables. Therefore, pulp extract of T. occidentalis may be a good nutraceutical product for the prevention and treatment of complication associated with consumption of high sucrose diet including neurovascular disease.

CHAPTER ONE

INTRODUCTION

Food is consumed to provide nutritional support for the body. It may be either plant or animal origin, and contains essential nutrients, such as carbohydrates, fats, proteins, vitamins, or minerals. It is ingested by an organism and absorbed to produce energy, maintain life, or stimulate growth.                                                                                             Urbanization has imposed a new lifestyle such as changes in food habits, physical activity, work patterns, smoking, and alcohol consumption; these factors are especially associated with an increase in the risk of chronic diseases and some infectious diseases (Tellnes, 2005).                                Nutrition is coming to the fore as a major modifiable determinant of chronic disease, with scientific evidence increasingly supporting the view that alterations in diet have strong effects, both positive and negative, on health throughout life. Most importantly, dietary adjustments may not only influence present health, but may determine whether or not an individual will develop diseases associated with metabolic disorder (WHO/FAO, 2002).

Neurodegenerative diseases, mental disorders, stroke and CNS traumas are problems of vast clinical importance. However, the crucial role of lipids in tissue physiology and cell signaling is demonstrated by many neurological disorders, including bipolar disorders and schizophrenia, and neurodegenerative diseases such as Alzheimer’s, Parkinson’s, Niemann-Pick and Huntington diseases, which are as a result of deregulated lipid metabolism  (Adibhatla and Hatcher, 2007). Altered lipid metabolism is also believed to be a key event which contributes to CNS injuries such as stroke (Adibhatla and Hatcher, 2008).

Most vegetables and fruits are rich in nutrients, low in calories, and high in fiber. Therefore, diets high in vegetables and fruits meet micronutrient, macronutrient, and fiber requirements without adding substantially to overall energy consumption. Whether it is the vegetables and fruits themselves or the absence of other foods displaced from the diet that is associated with CVD risk reduction has yet to be determined. Regardless, diets rich in vegetables and fruits have been shown to lower BP and improve other CVD risk factors in short-term randomized trials.

Several vegetable species abound in Nigeria and most West African countries where they are used partly as condiments or spices in human diets or as supplementary feeds to livestock such as rabbits, poultry, swine and cattle (Aletor and Adeogun, 1995). These vegetables are harvested at all stages of growth and fed either as processed, semi-processed or fresh to man while they are usually offered fresh to livestock.                                                The nutritional interest in some of these vegetable species stems from their rich contents of essential amino acids, vitamins and minerals. Further to their rich content of the mentioned nutrients, it is established that green vegetable leaves are the cheapest and most abundant source of proteins because of their ability to synthesize amino acids from a wide range of virtually available primary materials such as water, carbon dioxide, and atmospheric nitrogen (as in legumes). However, the presence of inherent toxic factors or anti-nutritional components in plants has been one major obstacle in harnessing the full benefits of the nutritional value of plant foods, vegetables inclusive. Although the presence of these antinutritional factors is always in trace quantities, they have been established to play significant roles in the nutritional quality of food. However, many food processing techniques have been highlighted as possible means of reducing or totally eliminating the antinutrient levels in plant food sources to innocuous levels that can be tolerated by animals particularly in monogastric nutrition.

AIMS AND OBJECTIVES

The aim of this study is to compare the effect of Telfairia occidentalis and Veronia amygdalina as well as juice and pulp extract diet in the brain of rats fed with high sucrose diet.

To investigate the effect of T. occidentalis and V. amygdalina diets on the some selected lipid profile such as triglycerides, total cholesterol, HDL and LDL in the brain of rats.
